Scotch-A-Roo's
Im been dying to try to try this recipe for ages - but i just didnt get the chance cos butterscotch chips was hard to come by. I went to all the confectionaries and cake supplies shops but they dont have it - i even tried the high end supermarkets like Jasons but they were always out - i gave up the idea of ever trying the recipe until one fine day i found the butterscotch chips and this was during the fasting period - there it was sitting right next to the hersheys semi sweet chocolate - talk about an answered prayer a few years later ...Anyways this is a delicious dessert bar / square - it requires no baking and let me warn you its devilishly sweet .. The first time i tried it it was way too sweet so the next time around i adjusted the sugar amount - and it came out just right ..... i was first introduced to this recipe by an ex he had a sweet tooth and suggested that i tried the recipe so many years later and now an ex later ...i finally get to taste what he was raving about hahaha .. anyways he was right it is really good stuff ...... Anyways before i blab on here is the recipe ...
Scotch-A-Roo's
Ingredients:
6 cups Rice krispies
1 Cup Sugar
1 Cup Corn Syrup 1
Cup Peanut butter
1 Package Semi Sweet Chocolate Chips (about 12 oz )
1 Package Butterscotch Chips (about 11 oz )
Method:
1. In a sauce pan combine sugar, corn syrup and peanut butter.
2. Melt over low heat until the mixture is creamy and the sugar has dissolved completely.
3. Pour over the rice cereal and mix. Press into a 9 x13 inch pan.
4. Then in a double boiler or the microwave oven melt the chocolate and butterscotch chips and frost the top of cereal mixture.
These are sooooo goood... I cut pressed mixture into little squares . The leftovers are put in the fridge.It tastes good cold or at room tempreature. I have included a picture of the finished product - i dont think it does real justice to the real thing but none the less the recipe is worth a shot!
