mashed potato turn around pt 2

And so the potato story continues fifty years or so later.. It seems in every country there is their own version of potato cakes aka potato patty – either way its the same thing and since I have introduced the Asian version of it here is the western version of it which uses leftover mashed potatoes and a few additional spices which I took from the Asian version of it. My mashed potato turn around and the recipe is as follows ..

Mashed Potato Turn Around

Ingredients
Mashed potatoes
1 egg
Corn meal (polenta)
Breadcrumbs
Cumin powder
White pepper
Salt
A pinch of nutmeg
Ginger and garlic paste (only use this if your mashed potato is plain.)***
Diced tomatoes
Diced onions
Diced green chillies (seeds removed)
Chopped scallions

Below is a picture of the breadcrumbs I used. This is one actually this is the only favorite brand of breadcrumbs I love to use. The Paxo golden crumbs has been around for ages and I remember how my granddad would use it to coat the fish when he makes fish and chips. Its been passed down for generations and if we wanted to make fish & chips this is what we use. And I have used it with almost all of the dishes I make that requires breadcrumbs.

Directions:

1-Put all the ingredients together without the egg and breadcrumbs and mix well.

2-Shape the mixture into patties.
3-Heat oil in shallow pan
4-Dip the patty in egg and then in the breadcrumbs and fry until golden
brown on both sides. Drain on paper towels to remove excess oil and then
serve.

It’s a simple dish to make and I serve it with sliced cucumbers and use chillie sauce as a dip –you cant go wrong there. *** since my leftover mashed potatoes had garlic in them I omitted the ginger and garlic paste for this recipe. That too is optional it works without the paste too.

I made a mistake in the mixture but rectified the problem soon after. I added the eggs into the mixture initially making the mixture much too soft so I added extra corn meal and some of the bread crumbs so it holds the mixture together and made it easier for me to shape them. I then rolled it in the bread crumbs and fry them. I didn’t dip it in egg again. So it’s entirely if you want to follow my mistake which works too or follow the recipe at hand hehee…

As for the vegetables you can add in peas, carrots, corn, mushrooms whatever you fancy because this is one of those anything goes recipes.

And that folks was how the mashed potato turned around. How mashed potatoes was converted into potato patties. Easy fun and with endless possibilities.
