Southern Food Thoughts

Red velvet cake. Chocolate Pound Cake. Fried fish. Cornbread. Collard Greens. Sausage & Apples. Macaroni & Cheese. Cube Steak with Rice & Gravy. Biscuits. Peach Cobbler. Fried Chicken. Baked Chicken Mashed Potatoes. Ox Tails. Tea cakes. Sweet tea. Lamb Chops. Okra, Tomatoes, & Turkey Bacon. Gumbo. Hamburgers & grilled hot dogs. Beef tips over rice. Red Beans & Rice. Cajun Rice. Dirty Rice. Smothered Chicken & Rice. Mustard Greens. Black Eyed Peas. Candy Yams Grilled Salmon. Snap Beans. Field Peas. Hop N John (Black Eyed Peas mixed with Rice). Grits. Scrambled Eggs. Turkey Bacon, Eggs & Cheese Biscuits. Steak sandwiches with sweet onions fried in the. Skillet & cheese. Squash Casser, Sweet Potato Pie. Buttermilk Custard Pie ole. Fried Green Tomatoes. Fried Zuchinni.Strawberry Pie. Southern Pecan Pie. Peanut Brittle.

“ Ya girls reckon if we learnt to make em’ Southern dishes we could win the hearts of them Southern gentlemen? – don’t you just love them, aint the way to the mans heart through his stomach? We doin’ some southern cookin’ soon ‘…. ;;) ..

Don’t even ask where that came from – I am getting goofy and a friend of mine & I were talking and food was obviously the subject - Southern cuisine to be exact and of course all that good ole southern charm & hospitality. There is just something about the South that appeals.. The accent maybe? Who knows.. Well I better end this blog entry I already had my goof moment.

But on a serious note some of these recipes are really searching for online and making. I have had tried makingFried Green Tomatoes which is delish and read the book too heh .. Cornbread is great too – I am sure every one have tried them. Southern fried chicken is great too though it takes a lot of work. Cajun fried chicken is just as great - Cajun spices can be store bought at just about any supermarket.

One thing I noticed about Southern cooking is their extensive use of buttermilk in their cooking especially pancakes, cakes, pies, even fried chicken. Unfortunately in Asia, buttermilk is not readily available though they can be found in certain specialty stores but if you cant get butter milk there is always substitutes or equivalents like the following ..

1 cup buttermilk = 1 cup yogurt

1 cup buttermilk = 1 cup milk PLUS 1 Tbsp vinegar or lemon juice (let stand

for 10mins before using in recipe)

1 cup buttermilk = 1 cup milk PLUS 1 ¾ teaspoons cream Tartar

1 cup buttermilk = ¼ milk PLUS ¾ cups yogurt

I find that the last substitute works the best – and that’s what I have been using if I can’t get fresh buttermilk. Here are some good Southern food recipe sites if anyone is keen to check out ..

Southern food spells home & comfort - as does most food. It brings family & friends together . Happy discovering Southern food, Southern charm & hospitality - it will be quiet an experience I am sure discovering new cultures and worldly recipes.
